How to Make a Non Dairy Ricotta to put on a Pizza



This is a simple, non-dairy, ricotta to top a pizza or stuff pasta shells, etc. I recommend Kite Hill Almond Ricotta, or half crumbled firm tofu and half Kite Hill (still tastes great and reduces the cost). Add Italian Herbs and spices of your choice.
