Oven Baked Tomato and Ricotta Risotto | Food Channel L



There are two different tomato textures In this risotto which makes it really special! One is oven baked tomatoes and other is fresh tomatoes. All of this is served with fresh ricotta cheese!

Ingredients for about 4 servings:

4 tomatoes
250 g arborio rice
600 ml of vegetable broth
1 onion
4 cloves of garlic
2 sprigs of basil
4 sprigs of thyme
50 g butter
150 g ricotta cheese
60 parmesan cheese
60 ml olive oil
Salt and black pepper
